PLANT FOR CHOCOLATE, COMPOUNDS AND CREAMS PROCESSING - MULTIPROCESS
Small chocolate producers feel the need to make their own products themselves by starting directly from selected cocoa beans according to their origin. They then proceed to making suitable mixes to characterise and stabilise taste by applying the various recipes with suitable ingredients, by adopting their own process technology and, finally, showing customers how their professional skills applied to a modern system can allow for the creation of superior products in terms of quality.   

To do this, it is necessary to use small systems with limited productions that accurately reproduce the various stages of the industrial process and allow for frequent variations of the type of chocolate without any risk of contamination and ensuring the quick and easy sanitisation of all parts in contact with the product.
THE STUDY
TECNO 3 has decided to tackle the problem by dividing the process into two parts: from the bean to the cocoa nibs and from the cocoa nibs to chocolate, initially focusing on the second stage to meet the demands of some customers.

After examining various systems already existing on the market, TECNO 3 wanted to direct the design stage towards an innovative machine that, fully in line with the production cycle, would represent a step forward, especially during the conching and recipe change stages. 

Here are the objectives regarded as essential by TECNO 3:
- The limited overall dimensions of the machine
- The accuracy in mixing ingredients
- The effective refining to achieve the desired grain size
- The quick and efficient conching to optimise taste
- The option of a quick disassembly and replacement of all contact parts of the product for accurate cleaning during the recipe change without overlapping ingredients.

THE SOLUTION
Multiprocess C is the compact mini-line that TECNO 3 has developed to produce small amounts of chocolate, whilst achieving the intended goals. The process starts by grinding the cocoa nibs and continues with dispensing and mixing the ingredients, as well as refining and conching, to obtain the liquid chocolate that will need to be shaped. Namely, the effectiveness of the conching stage is achieved by an airflow treatment on chocolate distributed on a thin layer, while the use of easily removable belts, without pumps and piping, makes it very easy to clean.

The process takes place automatically with a cyclical development and can be stopped when the product has reached the desired quality.
