The cocoa debacterization system produced by TECNO 3, series DB, treats whole beans before the roasting process.
The method consists in treating dosed quantities of beans with overheated steam for a relatively short time, however sufficient to drastically reduce the bacterial load.
The roasting of the whole bean, which takes place immediately after, allows to preserve the aromatic characteristics of the chosen cocoa.
The processing cycle has brief duration and is automatically repeated under PLC control.
The electrical panel is equipped with a touch screen used to set the process parameters and to display the real-time flow of the operations with the related temperature and pressure values.
The system is made entirely of AISI 304 stainless steel and is represented by various models able to feed continuous-cycle roasters of various production capacity.
